Peach Spinach Avocado Salad

This salad is a great blend of fruit, nuts, and veggies that will have you feeling satisfied and healthy.

Prep time: 15 minutes

Yield: 4 servings

Ingredients:

  • 6 cups spinach

  • 2 cups sliced peaches

  • 2 avocados, diced

  • 1/2 small red onion, thinly sliced

  • 1/2 cup candied pecans (see snack recipe page)

  • 3 tablespoons balsamic vinegar

  • 3 tablespoons extra virgin olive oil

  • 1 garlic clove, minced

  • 1/2 teaspoon dijon mustard

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 teaspoon honey

Instructions:

  • Make dressing by adding balsamic vinegar, olive oil, minced garlic, dijon mustard, salt, pepper, and honey to a bowl and whisk. 

  • Add spinach to a bowl and drizzle with a desired amount of dressing. Mix spinach with dressing to coat evenly.

  • Top with peach slices, chopped avocado, red onion, and candied pecans. Toss salad and serve.

Peach Basil Salad

This is an simple, flavorful blend of peaches and basil that makes the perfect side to any meal.

Prep time: 10 minutes

Ingredients:

  • 4-6 medium sized peaches, diced

  • 1/2 tablespoon honey

  • 6 basil leaves, thinly cut

  • 1/2 cup lemon chevre

  • 1/2 teaspoon salt

Instructions:

  • Place diced peaches in a bowl and top with honey and salt. Gently toss

  • Add basil and lemon chevre and toss gently to mix. Serve immediately.

Grilled Cinnamon & Sugar Peaches

A peachy dish that's so versatile, we didn't know what page to put it under. Nevertheless, here it is.

Prep time: 10 minutes

Cook Time: 5 minutes

Yield: 5 servings

Ingredients:

  • 1 stick unsalted butter, room temp

  • 1 teaspoon cinnamon

  • 2 tablespoons brown sugar

  • 6 ripe peaches, halved and pitted

  • Canola Oil/Avocado Oil

  • Pinch of salt

Instructions:

  • In a bowl, add butter and stir until smooth. Add cinnamon, brown sugar, and salt. Mix thoroughly

  • Heat grill to 300-375 degrees fahrenheit. Brush peaches with oil. Grill until golden brown and cooked throughout.

  • Cover each grilled peach half with a few teaspoons of cinnamon butter and let butter melt over peaches. Serve plain or over ice cream!
