Peach Pork Tenderloin

A quick and easy main dish with tender pork and sweet peaches! In less than 30 minutes, you'll have something on the table the whole family will love.

Yield: 4 servings
Ingredients:
- 1 pound pork tenderloin
- 4 medium-sized peaches, sliced
- 1/2 teaspoon salt

1/2 teaspoon pepper

2 teaspoons olive oil

1 tablespoon lemon juice

1/4 cup peach preserves
Instructions:

Flatten tenderloin to 1/4" thickness. Cut into 12 equal sized pieces. Season with salt and pepper.

Place non-stick skillet over medium heat. Pour in oil and cook pork tenderloin pieces until tender and cooked throughout. Remove pork from pan.

Pour peaches and lemon juice into skillet and cook for 3-4 minutes until tender.

Add pork and preserves into skillet and stir until evenly heated. Serve and enjoy!
