Grilled Peaches and Plank Salmon

Get all your healthy fish oils with the savory taste of cedar plank grilled salmon. Top it off with sweet peaches and you have one mouth-watering dish.

Yield: 4 servings


  • 5 peaches

  • 2 teaspoons vegetable oil

  • 1/2 teaspoon salt

  • 1/4 cup fresh basil

  • 1/4 cup chopped green onion

  • 2 tablespoons honey

  • 2 teaspoons lemon juice

  • 1-1.5 pound skin-on salmon fillet

  • 1 cedar plank for grilling


  • Cut your peaches into halves. Place into a bowl and cover with salt and oil.​

  • Heat grill to 300-350 degree Fahrenheit. Place peaches on grill for 2 minutes away from direct heat. Flip and grill on other side for 1 minute. Remove peaches from heat afterwards to cool.

  • Cut cooled peaches into half-inch squares. In a bowl, mix your peaches, basil, honey, green onion, and lemon juice.

  • Place salmon fillet on cedar plank skin-down. Top with a few spoonfuls of homemade peach salsa from previous step. Place on grill for 15-20 minutes until flesh is cooked throughout and starting to flake. Check periodically as it cooks to make sure it doesn't get scorched.

  • Remove salmon from grill and serve with remaining peach salsa.

Grilled Peaches and Pork Chops

This recipe is the perfect centerpiece for your Sunday evening dinner. Let Dad take over the grill and do his thang. Or Mom. Or anyone for that matter.

Yield:  2 servings


  • 2 garlic cloves

  • 1/4 cups cilantro

  • Salt

  • 1/4 teaspoon black pepper

  • 1 lime

  • 1/2 tablespoon low-sodium soy sauce

  • 1/2 tablespoon dark brown sugar

  • 1/4 teaspoon crushed red pepper

  • 3 peaches

  • 2 pork chops

  • 1/2 bunch green onions


  • Finely mince garlic cloves and cilantro. Add garlic, cilantro, black pepper, and soy sauce into a bowl and mix thoroughly. Rub mixture all over pork chops. Place pork chops in a sealed bag and refrigerate overnight.

  • In blender, combine the juice of your lime, sugar, red pepper, 1 peach, and salt to taste. Sauce can be refrigerated overnight or served immediately.

  • Prepare your grill to a temperature between 350 and 400 degree Fahrenheit.

  • Place pork chops on grill. Cook for 6 minutes on each side, turning only once. Make sure your pork chop is cooked all the way through but not dried out.

  • Cut your remaining peaches into halves and place on grill for 3 minutes away from direct heat. Flip to other side for one minute.

  • Grill green onions for 3 minutes.

  • Serve peaches, onions, and pork chops immediately. Serve with homemade sauce.

Peach-Pork Tenderloin

This is an extremely easy, filling dish. In just 20-30 minutes, you'll have something the whole family will love.

Prep time: 10 min

Cook time: 10-15 min

Yield: 4 servings


  • 1 pound pork tenderloin

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 2 teaspoons olive oil

  • 1 tablespoon lemon juice

  • 1/4 cup peach preserves

  • 4 medium-sized peaches


  • Cut peaches into slices.

  • Flatten tenderloin into 1/4 inch thickness. Cut into 12 equal sized pieces. Season with salt and pepper.

  • Place non-stick skillet over medium heat. Pour in oil and cook pork tenderloin pieces until tender and cooked throughout. Remove pork from pan.

  • Pour peaches and lemon juice into skillet and cook for 3-4 minutes until tender.

  • Add pork and preserves into skillet and stir until heat is even throughout.

Skillet Peach Glazed Chicken

This is an easy recipe that requires hardly any prep and comes out absolutely delicious. Y'all enjoy.

Cook time: 30 minutes

Yield: 4 servings


  • 1 lb. boneless, skinless chicken thighs

  • 11/2 tablespoons vegetable oil

  • 1/4 cup chopped sweet onion

  • 1/2 teaspoon minced rosemary

  • 1/4 cup brown sugar

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons dijon mustard

  • Salt (to taste)

  • 3 medium size peaches, chopped into bite-size pieces

  • Pepper (to taste)


  • Season raw chicken thighs with salt and pepper to taste

  • Heat large skillet over medium-high heat. Place 1 tablespoon oil into skillet. Add chicken and cooked about 7 minutes on each side or until each piece is cooked through and golden brown. Remove chicken from skillet and place under foil to keep warm.

  • Without cleaning skillet, add remaining oil, rosemary, and onion. Heat until onions turn a light golden color, scraping up anything that is sticking to the bottom of the skillet.

  • Add brown sugar, mustard, vinegar, peaches, and a pinch of salt to skillet. Cook about 10 minutes until peaches are soft.

  • Return chicken to the skillet, mixing all ingredients together until heated throughout. Continuously spooning sauce over chicken.

  • Serve when dish is heated throughout.

Peachy Jerk Chicken Meatloaf

Prep time: 15 minutes

Cook time: 1 hour 10 minutes

Yield: 8 servings


  • 1 finely chopped red bell pepper

  • 3 finely chopped green onions

  • 1/4 cup finely chopped red onion

  • 2 lbs. ground chicken

  • 1/2 cup bread crumbs

  • 1 egg

  • 1 tablespoon jamaican jerk seasoning

  • 1 tablespoon minced garlic

  • salt to taste

  • pepper to taste

  • 8-10 medium sized peaches


  • Preheat oven to 350 degrees Fahrenheit. Coat the inside of a 10x5 inch loaf pan with oil or grease.

  • Place red bell pepper, green onions, and red onion into a bowl and mix.

  • Take 2 peaches and place in blender. Blend until smooth. If you do not have a blender, mashing the peaches is fine.

  • Take half of your pepper and onion mixture and place into a separate bowl. Add ground chicken, egg, bread crumbs, jerk seasoning, garlic, salt, pepper, and blended peaches. Mix well and place into pan, shaping it into a loaf. Cover with aluminum foil.

  • Bake in oven for 25 minutes. Take aluminum foil off and bake for 25 minutes more.

  • While meatloaf is baking, chop remaining peaches into bite size pieces. Mix with remaining bell pepper, green onion, and red onion mixture.

  • Take meatloaf out of oven and spoon peach mixture over top. Place meatloaf back in oven for 20 more minutes, or until there is no longer any pink in center. A meat thermometer should read at least 165 degrees Fahrenheit when inserted into meatloaf. Enjoy.
