Prep time: 5 minutes
Cook time: 30 minutes

Yield: 4 servings

  • 1 pound boneless skinless chicken thighs
  • 3 medium peaches, chopped into bite-size pieces
  • 1-1/2 tablespoons vegetable oil
  • 1/4 cup sweet onion, chopped

  • 1/2 teaspoon rosemary, minced

  • 1/4 cup brown sugar

  • 2 tablespoons apple cider vinegar

  • 2 teaspoons dijon mustard

  • Salt and pepper to taste

  • Season raw chicken thighs with salt and pepper to taste.

  • Heat large skillet over medium-high heat. Place 1 tablespoon oil into skillet. Add chicken and cook about 7 minutes on each side, or until each piece is cooked through and golden brown. Remove chicken from skillet and place under foil to keep warm.

  • In same skillet, add remaining oil, rosemary, and onion. Heat until onions turn a light golden color, scraping up any yummy bits that are sticking to the bottom of the skillet.

  • Add brown sugar, mustard, vinegar, peaches, and a pinch of salt to skillet. Cook about 10 minutes, or until peaches are soft.

  • Return chicken to the skillet, mixing all ingredients together until heated throughout, continuously spooning sauce over chicken.

  • Serve when heated through!
