Skillet Peach Glazed Chicken
This savory sweet peachy chicken will be on the dinner table in no time- and there probably won't be leftovers. Y'all enjoy!

Ingredients:
- 1 pound boneless skinless chicken thighs
- 3 medium peaches, chopped into bite-size pieces
- 1-1/2 tablespoons vegetable oil

1/4 cup sweet onion, chopped

1/2 teaspoon rosemary, minced

1/4 cup brown sugar

2 tablespoons apple cider vinegar

2 teaspoons dijon mustard

Salt and pepper to taste
Instructions:

Season raw chicken thighs with salt and pepper to taste.

Heat large skillet over medium-high heat. Place 1 tablespoon oil into skillet. Add chicken and cook about 7 minutes on each side, or until each piece is cooked through and golden brown. Remove chicken from skillet and place under foil to keep warm.

In same skillet, add remaining oil, rosemary, and onion. Heat until onions turn a light golden color, scraping up any yummy bits that are sticking to the bottom of the skillet.

Add brown sugar, mustard, vinegar, peaches, and a pinch of salt to skillet. Cook about 10 minutes, or until peaches are soft.

Return chicken to the skillet, mixing all ingredients together until heated throughout, continuously spooning sauce over chicken.

Serve when heated through!
