Cedar Plank Salmon with Grilled Peaches

Mouth-watering grilled salmon with the sweetness of grilled peaches and a savory blend of basil and green onion. Set the table on the patio on a beautiful summer night and serve up this dinner you won't soon forget!

Yield: 4 servings
Ingredients:

  • 5 peaches, halved

  • 1-1/2 pound salmon fillet, skin on

  • Cedar plank for grilling

  • 2 teaspoons vegetable oil

  • 1/2 teaspoon salt

  • 1/4 cup fresh basil

  • 1/4 cup green onion, chopped

  • 2 tablespoons honey

  • 2 teaspoons lemon juice

Instructions:

  • Place peaches into a bowl and toss with salt and oil.​

  • Heat grill to 300-350° F. Place peaches on grill for 2 minutes, away from direct heat. Flip and grill peaches on the other side for 1 minute. Remove peaches from heat and let cool.

  • Cut cooled peaches into 1/2" squares. In a bowl, mix peaches, basil, honey, green onion, and lemon juice.

  • Place salmon fillet on cedar plank, skin side down. Top with a few spoonfuls of homemade peach mixture from previous step. Place salmon plank on grill for 15-20 minutes, checking often, or until flesh is cooked throughout and flakes easily with a fork. Remove salmon from grill and serve with remaining peach mixture.
